Hydrogen in the Food Industry

Hydrogen plays important roles in food processing. Partial hydrogenation of vegetable oils converts liquid oils to semi-solid fats used in margarine, shortening, and confectionery. Modified atmosphere packaging (MAP) uses hydrogen-nitrogen mixtures to extend shelf life of fresh produce and bakery products. Hydrogen is also used as a reducing agent in certain food-grade chemical processes.

Food-contact hydrogen must meet strict purity standards, free from hydrocarbons, carbon monoxide, and sulfur compounds.
