Hydrogen in the Food Industry
Hydrogen plays important roles in food processing. Partial hydrogenation of vegetable oils converts liquid oils to semi-solid fats used in margarine, shortening, and confectionery. Modified atmosphere packaging (MAP) uses hydrogen-nitrogen mixtures to extend shelf life of fresh produce and bakery products.
